Healthy Blueberry Banana Bread

Ingreadient

  • nonstick cooking spray, for greasing
  • 3 ripe bananas
  • 2 large eggs
  • ½ cup plain 2% Greek yogurt(120 g)
  • ⅓ cup honey(115 g)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 ½ cups whole wheat flour(195 g)
  • 1 cup blueberries(100 g)

Direction

  1. Preheat the oven to 350˚F (180˚C). Grease a 9 x 5-inch (23 x 13-cm) loaf pan with nonstick spray.
  2. In a medium bowl, mash the bananas. Mix in the eggs, yogurt, honey, vanilla, and baking soda.
  3. Add flour and mix just to incorporate, then gently fold in the blueberries.
  4. Bake for about 50 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  5. Allow to cool for 15 minutes before slicing and serving.
