Pancake Muffins

Who says you can't have pancakes on the go? These fruity flapjacks are the perfect solution for busy mornings. Packed with juicy berries and dunked in syrup, they're like a portable breakfast sandwich that will make your taste buds sing.

Ingreadient

  • 2 cups flour(250 g)
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 eggs
  • 1 ½ cups milk(355 mL)
  • 2 tablespoons maple syrup
  • 2 tablespoons butter, melted
  • 2 tablespoons chocolate chips
  • 12 raspberries
  • ¼ cup blueberry(25 g)
  • ½ banana, sliced

Direction

  1. Preheat oven to 375ºF (190ºC).
  2. In a large bowl, combine flour, baking powder, and salt.
  3. Add in eggs, melted butter, and maple syrup. Whisk. Add in milk and whisk until all ingredients are incorporated.
  4. Evenly distribute the batter in a 12-cup nonstick muffin tin. Top with fruit and chocolate chips.
  5. Bake for 20-25 minutes, or until a toothpick comes out clean.
