Smashed Kefta Tacos With 50 Garlic Clove Toum

A viral sensation, Smashed Kefta Tacos are a delicious fusion of spiced ground beef nestled in a crispy tortilla. Elevate the experience with our 50 Garlic Cloves Toum, a rich and creamy garlic sauce that adds a burst of flavor to every bite.

Ingreadient

  • 1 lb 80/20 ground beef
  • ½ bunch fresh cilantro, chopped
  • 1 small white onion, grated
  • 1 serrano pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon Signature SELECT™ Cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 50 cloves garlic, peeled
  • 2 teaspoons kosher salt
  • 3 cups Signature SELECT™ Avocado Oil
  • ½ cup lemon juice
  • 8 flour tortillas
  • nonstick cooking spray
  • sliced tomato, for garnish
  • sliced cucumber, for garnish
  • sliced onion, for garnish
  • chopped fresh herb, for garnish

Direction

  1. Make the kefta: In a large bowl, mix together the ground beef, cilantro, onion, serrano pepper, garlic, coriander, cumin, Signature SELECT™Cinnamon, salt, and black pepper until well combined. Set aside.
  2. Make the toum: Place the garlic cloves and salt into a food processor. Blend for about 1 minute, or until the garlic is finely minced. Scrape down the sides of the food processor.
  3. With the food processor running, slowly pour in 1-2 tablespoons Signature SELECT™ Avocado Oil. Stop the food processor and scrape down the bowl. Turn the food processor on again and continue to pour in another 1-2 tablespoons oil until the mixture turns creamy and emulsified. Increase the speed of pouring in the oil and alternate with the lemon juice until all of the oil and lemon juice are incorporated. This will take about 10 minutes to complete.
  4. Transfer the toum to a container and store in the refrigerator until needed. (Makes about 4 cups and keeps well in the refrigerator for 3 months.)
  5. Assemble the tacos: Using your hands, form the kefta into 8 equal-sized meatballs. Place each onto a tortilla and spread as thin and wide as possible. The meat will shrink when it cooks.
  6. Grease a large pan with nonstick spray and place over medium-high heat. Place the tortilla, meat-side down, into the hot pan and cook for 2-3 minutes, until browned. Flip the tortilla and cook for 1 more minute, or until the meat is cooked through.
  7. Garnish with tomatoes, cucumbers, onions, herbs, and a generous drizzle of toum.
