Miso Salmon

This dish combines the rich flavors of white miso, sake, and mirin to create a perfectly marinated and deliciously broiled salmon. This recipe is simple, yet sophisticated, making it perfect for a weeknight dinner or an impressive weekend meal. The savory-sweet marinade infuses the salmon with deep umami flavors, while the broiling technique ensures a beautifully caramelized exterior.

Ingreadient

  • 2 lb salmon, sliced into filets
  • ¼ cup sake
  • ¼ cup mirin
  • 6 tablespoons white miso
  • 6 tablespoons sugar
  • fresh chive, for garnish

Direction

  1. In a small pot over medium heat, add in the sake and mirin, and let simmer for 2 minutes.
  2. After 2 minutes, add sugar and miso. Let the mixture fully emulsify and set aside to cool, about 20 minutes.
  3. Place your salmon into an airtight, sanitary container and add in the cooled miso mixture, making sure all of the salmon is coated.
  4. Marinate the salmon in the refrigerator for one day, or at least 12 hours.
  5. After marinating, place salmon on a baking sheet lined with some parchment paper and broil 6 inches away from the heat source, for about 6-10 minutes until cooked to your liking.
  6. Serve over a bead of rice or desired grain, and garnish with chives.
